3 Pasture Raised Eggs
1 Cup of Chopped Cauliflower
1 Cup Sliced Tomatoes
½ Cup of Diced Red Onion
¼ Cup of Chopped Cilantro
¼ Cup of Diced Bell Pepper
1 Tablespoon Coconut Oil
1 Tablespoon Diced Jalapeno Pepper (Optional)
Add cauliflower into a food processor and mix until a rice consistency.
Pour cauliflower into a medium bowl.
Add coconut oil to a medium frying pan on medium heat.
Crack 3 eggs into a medium mixing bowl and beat eggs until mixed.
Add 1 tablespoon to a medium frying pan on medium heat.
Next add in eggs into the frying pan. Cook for 4-5 minutes or until cooked.
Place the egg into the bowl with the cauliflower.
Add in all the other ingredients.
Enjoy with an organic green tea or organic low acid coffee!
