INGREDIENTS:

3 Pasture Raised Organic Eggs 2 Cloves of Garlic

1/8 of a Red Onion

1 Tablespoon of Coconut Oil

2 Mushrooms

4 Organic Strawberries

1 Cup of Organic Spinach

1⁄4 of 1 Avocado

 

PREPARATION:

Add 1 tablespoon of coconut oil to a sauté pan over low-medium heat.

Add in 2 diced and peeled cloves of garlic and 1/8 of a red onion diced into the sauté pan. Sauté for 2 minutes then add in the sliced mushrooms. Sauté for an additional 2 minutes.

Whip 3 eggs in a medium bowl. Add eggs and 1 cup of Organic Spinach into the pan.

Lightly stir into a scramble. Once you have the desired consistency turn off the pan and add in 1⁄4 of an avocado.

Enjoy with an organic green tea or organic low acid coffee!
